Thanks to my friend Tammy for reminding me I hadn't made this recipe in too long. This Braised Coconut Spinach & Chickpeas from @thekitchn is everything healthy comfort food should be! Creamy, full of flavor, hearty but still bright with a hit of fresh lemon--even your non-vegan friends would be satisfied when you serve this over roasted sweet potatoes.
